Here’s a classic recipe for Halwa Puri, a popular South Asian breakfast dish consisting of fluffy fried bread (puri) served with semolina halwa and spiced chickpeas.

  1. Halwa Recipe:
    Ingredients:
  • 1 cup semolina (suji)
  • 1 cup sugar
  • 3 cups water
  • 1/4 cup ghee or clarified butter
  • 4-5 green cardamom pods
  • A pinch of saffron or yellow food coloring (optional)
  • Chopped nuts for garnish (almonds, pistachios)

Instructions:

  1. In a pan, heat the ghee and add the cardamom pods until fragrant.
  2. Add semolina and roast on low heat until it turns golden brown.
  3. In a separate pot, boil water with sugar and saffron or food coloring until the sugar dissolves.
  4. Slowly pour this sugar syrup into the roasted semolina while stirring constantly to avoid lumps.
  5. Cook until the halwa thickens and pulls away from the sides of the pan.
  6. Garnish with nuts and set aside.
  1. Puri Recipe:
    Ingredients:
  • 2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • Salt to taste
  • 2 tbsp oil
  • Water as needed
  • Oil for frying

Instructions:

  1. In a bowl, mix both flours with salt and oil.
  2. Gradually add water and knead into a smooth, firm dough. Let it rest for about 15-20 minutes.
  3. Divide the dough into small balls and roll each one into a small, round disc.
  4. Heat oil in a deep frying pan and fry each puri until it puffs up and turns golden brown.
  5. Drain excess oil on a paper towel.
  1. Spiced Chickpeas (Chana Masala)
    Ingredients:
  • 2 cups boiled chickpeas (or 1 can, drained and rinsed)
  • 1 large onion, finely chopped
  • 1 large tomato, chopped
  • 1-2 green chilies, chopped
  • 1 tbsp ginger-garlic paste
  • 1/2 tsp turmeric powder
  • 1 tsp cumin seeds
  • 1 tsp red chili powder
  • 1 tsp coriander powder
  • Salt to taste
  • Fresh coriander for garnish
