Ingredients:
- 500g (1 lb) fish fillets (such as tilapia, cod, or salmon), cut into pieces
- 2 tablespoons oil (vegetable or coconut oil)
- 1 large onion, finely chopped
- 2 tomatoes, chopped
- 2 tablespoons ginger-garlic paste
- 2-3 green chilies, slit (adjust to taste)
- 1/2 cup coconut milk (optional, for a creamier curry) Spices:
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 tablespoon coriander powder
- 1 teaspoon garam masala powder
- 1/2 teaspoon cumin powder
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
- Marinate the Fish: Sprinkle salt and a little turmeric on the fish pieces and let marinate for about 10 minutes.
2.Cook the Fish: In a pan, heat 1 tablespoon oil over medium heat. Lightly fry the fish pieces until golden on both sides (about 3-4 minutes per side). Remove and set aside.
- Sauté the Spices: In the same pan, add another tablespoon of oil. Add cumin seeds and let them splutter. Then, add chopped onions and sauté until golden brown.
- Add Ginger-Garlic Paste and Chilies: Stir in the ginger-garlic paste and green chilies, cooking for another 2 minutes until fragrant.
- Add Tomatoes and Spices: Add the chopped tomatoes, turmeric powder, red chili powder, coriander powder, and cumin powder. Cook until the tomatoes are soft and the oil starts to separate from the masala.
- Simmer with Coconut Milk: If you’re using coconut milk, add it now, and bring the mixture to a simmer.
- Add Fish and Simmer: Gently add the fish pieces to the pan, spooning the sauce over them. Let the curry simmer for 5-7 minutes, allowing the fish to absorb the flavors.
- Finish with Garam Masala: Sprinkle garam masala and gently mix. Adjust salt as needed.
- Garnish and Serve: Garnish with fresh coriander leaves and serve hot with rice or flatbreads.
