Ingredients:

  • 500g (1 lb) fish fillets (such as tilapia, cod, or salmon), cut into pieces
  • 2 tablespoons oil (vegetable or coconut oil)
  • 1 large onion, finely chopped
  • 2 tomatoes, chopped
  • 2 tablespoons ginger-garlic paste
  • 2-3 green chilies, slit (adjust to taste)
  • 1/2 cup coconut milk (optional, for a creamier curry) Spices:
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 tablespoon coriander powder
  • 1 teaspoon garam masala powder
  • 1/2 teaspoon cumin powder
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

  1. Marinate the Fish: Sprinkle salt and a little turmeric on the fish pieces and let marinate for about 10 minutes.

2.Cook the Fish: In a pan, heat 1 tablespoon oil over medium heat. Lightly fry the fish pieces until golden on both sides (about 3-4 minutes per side). Remove and set aside.

  1. Sauté the Spices: In the same pan, add another tablespoon of oil. Add cumin seeds and let them splutter. Then, add chopped onions and sauté until golden brown.
  2. Add Ginger-Garlic Paste and Chilies: Stir in the ginger-garlic paste and green chilies, cooking for another 2 minutes until fragrant.
  3. Add Tomatoes and Spices: Add the chopped tomatoes, turmeric powder, red chili powder, coriander powder, and cumin powder. Cook until the tomatoes are soft and the oil starts to separate from the masala.
  4. Simmer with Coconut Milk: If you’re using coconut milk, add it now, and bring the mixture to a simmer.
  5. Add Fish and Simmer: Gently add the fish pieces to the pan, spooning the sauce over them. Let the curry simmer for 5-7 minutes, allowing the fish to absorb the flavors.
  6. Finish with Garam Masala: Sprinkle garam masala and gently mix. Adjust salt as needed.
  7. Garnish and Serve: Garnish with fresh coriander leaves and serve hot with rice or flatbreads.
