Chicken Karahi Recipe

Ingredients:

  • 1 kg chicken, cut into pieces (bone-in for more flavor)
  • 1/4 cup oil or ghee
  • 2 medium onions, finely sliced
  • 2 tablespoons ginger-garlic paste
  • 2-3 green chilies, slit (adjust to taste)
  • 2 large tomatoes, chopped
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • Salt to taste
  • 1 tablespoon garam masala
  • Fresh coriander leaves, chopped (for garnish)
  • 1-2 green chilies, sliced (for garnish)
  • Lemon wedges (for serving)

Instructions:

  1. Heat Oil: In a karahi or heavy-bottomed pan, heat the oil or ghee over medium heat.
  2. Sauté Onions: Add sliced onions and sauté until they turn golden brown.
  3. Add Ginger-Garlic Paste: Stir in the ginger-garlic paste and sauté for a couple of minutes until fragrant.
  4. Cook Chicken: Add the chicken pieces to the pan. Cook on high heat for about 5-7 minutes until the chicken is browned on all sides.
  5. Add Spices: Add chopped tomatoes, green chilies, red chili powder, turmeric powder, coriander powder, cumin powder, and salt. Mix well and cook until the tomatoes soften and release their juices (about 5-7 minutes).
  6. Simmer: Reduce the heat to low, cover the pan, and let it simmer for about 15-20 minutes until the chicken is fully cooked and tender. Stir occasionally to prevent sticking.
  7. Final Touches: Once the chicken is cooked, sprinkle garam masala on top and stir well. Cook for an additional 2-3 minutes.
  8. Garnish: Turn off the heat and garnish with fresh coriander leaves and sliced green chilies.
