- 2 tablespoons vegetable oil or ghee
- 1 large onion, finely chopped
- 4-5 garlic cloves, minced
- 1-inch piece of ginger, grated
- 1-2 green chilies, slit (adjust to taste)
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- Juice of 2 lemons
- Salt, to taste

- Marinate the Chicken.
- In a bowl, combine the chicken pieces with lemon juice, salt, turmeric powder, and half of the garam masala. Mix well and let it marinate for at least 30 minutes (or longer for more flavor).
- Heat the Oil:
- In a large skillet or pot, heat the vegetable oil or ghee over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Sauté Aromatics:
- Add the chopped onions and sauté until they turn golden brown. Then add minced garlic, grated ginger, and green chilies. Cook for another 1-2 minutes until fragrant.
- Cook the Chicken:
- Add the marinated chicken to the skillet, along with the coriander powder and the remaining garam masala. Stir well to coat the chicken with the spices.
- Simmer:
- Cover the skillet and cook for about 15-20 minutes on low heat, stirring occasionally, until the chicken is cooked through and tender. If needed, add a little water to prevent sticking.
- Adjust Seasoning:
- Taste and adjust salt and lemon juice if needed. You can add more lemon juice for extra tang.
- Garnish and Serve:
- Garnish with fresh coriander leaves. Serve hot with rice, naan, or paratha.
